Roast when the weather cools

Fresh tomatos and garlic in olive oil ready for the oven


Tomato and garlic with olive oil is a good thing to roast at this time of year.

In October I find it hard to adjust to the temperature outside.

I feel a bit sad to accept the fact that I am greeted by a chill when I open my door.

It’s too cold for bare feet outside.

Acceptance is necessary and harvest time brings consolation.

All the local markets seem to have tomatos on sale.

So I keep buying packs of them for roasting.

I mix them up with olive oil in a pan.

Then I roast them at 350 in the oven.

It smells so good.

Roasted for an hour or so in the oven at 350

This gets them really roasty.

Look at them – there – in the photo on the left.

Mmmmmm.

Next, when they cool down, I’m going to remove all the skins and crush them.

Then I will make some type of sauce to go with pasta – maybe lasagne.

I haven’t decided yet.

It doesn’t matter.

It will be so good no matter what you mix with it (within reason of course).

You should try it.

Tomatos are plentiful at this time of year.
